I strongly dislike cottage cheese. It makes me gag, so I must add ingredients to cover up the taste and texture. First I mix the FOCC with an immersion blender and let it sit for 3 or 4 minutes. Then I mash up some fruit and stir it into the FOCC with a few drops of stevia and vanilla extract. For a savory FOCC, I use some chopped herbs - cilantro, dill, scallions, a dab of Dijon mustard, maybe some capers - and fold these into the FOCC to make a dip for carrots, celery, etc.
Regarding dinner. It’s a challenge for me because I’m Italian and love pasta!! Sometimes I gently simmer some chopped plum tomatoes with a little basil, fresh garlic and a drop of honey to cut the acid. I serve over spaghetti squash with some grated Parmesan cheese and a little crushed red pepper. Sometimes I make a gremolata by mincing fresh garlic together with lemon zest or lemon peel, parsley and a bit of sea salt. I sprinkle it on lightly steamed vegetables (zucchini or eggplant) and add a little dash of real balsamic vinegar (no sugar added, only made with grape must).
